Zero trans fat chocolate chip cookie
Easter Seals Ambassador Carolyn Gallant changed the recipe a
bit an offers up this zero trans fat cookie.
Ingredients:
1/2 cup Becel
3/4 cup sugar
1 egg
1 tsp vanilla
1 cup all purpose flour (if you want a rounder drop cookie use
1 1/4 cups of flour)
1/3 cup cocoa powder
1/4 tsp baking soda
1/8 tsp salt
1/4 cup chopped walnuts (optional)
Instructions:
Preheat oven to 350 degrees.
In large bowl, cream sugar and Becel. Add the egg and vanilla
and mix until light and fluffy.
Combine the flour, cocoa, baking soda and salt in a small bowl.
Stir flour mixture into the butter mixture and mix until well
blended. Mix in the walnuts.
Drop by rounded teaspoonfuls onto ungreased cookie sheets.
Bake for 10 minutes in the preheated oven or just until set.
Cool slightly on the cookie sheet before transferring to wire
racks to cool completely.

homemade raisin bread, molasses bread and cookies.
Carolyn was the 2005 Easter Seals Ambassador, and was star of
the Easter Seals Telethon.
